It starts with a proper momo. We fill each dumpling with a spiced mix — finely chopped vegetables or minced chicken with onion, ginger, garlic and green chilli — and fold it by hand. Instead of steaming and stopping there, we coat the momos and fry them so the outside turns crackly and golden while the inside stays hot and juicy.
The result is texture on texture — crunch, then a soft, spiced centre — with a sharp, chilli-forward dipping sauce to bring the heat.
